If the black cow has both the black gene and the red gene, she will be black (black is dominant).
It's still possible (but pretty unlikely) to have a red calf from a black bull and a black cow. Either the cow or the bull has to be "homogeneous black" to have 100% certainty of a black calf. If both carry red gene, it can happen.
The guy I bought my SimAngus bulls from has a herd of 100% all black cows and all his bulls were all black and he had a red bull calf in his pen. It had a blaze face to boot.
