The beef in grocery stores is not dry aged. It will never be as good as local processed. Nothing wrong with it, just not as good.
I do think the commercial processors are making a long term mistake adding back moisture- makes beef cook up awful.
On the other hand- kids that grew up not eating dry aged beef, think something is wrong with it :(
