Blooming where I am planted! | LOTS LOTS LOTS you can do with green peppers...here are some of my faves. 1. Chop and freeze in plastic containers. Fork out a few and use in scrambled eggs in the morning. (you can do the same with onions). 2. Make Spanish arroz con pollo. Make sure to use the short-grain sushi rice (don't use long grain!!!) and real saffron, or it won't turn out very well. Each recipe uses 2 green peppers (it says 1 red and 1 green here but you can use 2 green). Here's a good recipe--but note--I leave out the chili peppers. This is not a traditional recipe--this dish is NOT spicy! Use a little glass jar of sweet pimientos instead. Also--add 1/2 cup of dry white wine in with the water for a great flavor. Garnish with lemon juice or fresh lemons when serving. http://www.foodnetwork.com/recipes/rachael-ray/arroz-con-pollo-recipe/index.html |
