Driftless SW Wisconsin

Actually you are right, Gary, I now have tomorrow's lunch in the frig, complete with mashed potatoes and veggies.

I was just out earlier this evening looking at the steers grazing in corn and sitting in the pasture with the cows. Amazing how the grass is growing in March yet. They are not much interested in hay any more.

But thinking about these ribeyes, I am going to take some photos of a couple ribeyes from the heaviest of my 13 month old steers that will be processed off  of corn in about 4 weeks and compare them to the 23 month old ones pictured above. Should be interesting with both of them coming right off corn. I'm looking for good marbling but less fat.

These pictured cooked up nicely though. I better finish up the leftovers so I can thaw a pack of T-bones! Purely experimental research and business you understand...;)
