Driftless SW Wisconsin

infarmdave - 3/25/2012 15:19 now jim i hate to step on our toes on a sunday, but are you sure you got your beef back and not angus, of course you know i am just kidding, looks good and i am sure it will grill good as well enjoy the fruit of your labor.

I'm hoping it is mine Dave. It sure was good off the grill for that off-color, discounted-cause-its-not-black-hided Hereford. This one was a holdover and about 22 months old at harvest. One of my goals is to get the internal marbling on the 13 month olds coming off of grazing corn with less visible fat. The 13 month old is very tender.

And as you point out it is nice to be able to sample the fruit of a couple years worth of work. I think thats one of the things we all enjoy about cattle, either at the sale barn or the grill.

Thanks for the kind words everyone.

Jim at Dawn
