| Probably the surface next to the hoof was black from being heated to be shaped and burned to the hoof. The exposed working surface will be bare steel, not colored at all. New shoes were sometimes painted but once they got heated to get the final shape there wasn't any paint left. And a few miles on the dirt and gravel took off the rest of the paint. They were replaced regularly from being worn out if on gravel or pavement. That is worn away.
