Hey Illinois boy,

If your talking about the Calais Flint (http://www.highmowingseeds.com/organic-seeds-roys-calais-flint-corn.html), I wouldn't worry about the tillering.
My recollection is that it tillered a lot when I grew it about 10 years ago but it still made large really nice looking ears.

You could could try cutting off all the tillers on some of the plants just to see if it makes a difference but I would leave most of them.
