Subject: Organic Wheat Help?

Going to try organic wheat (AC Domain) this year, looking at about 55 acres. The land was summer fallowed last year, before that was alfalfa for 5 -7 years.

What I am looking for help with is a weed control strategy and seeding rate? I have booked enough to seed 3 bushels per acres, but not sure I want to go that high. I have a rod weeder and all the necessary tillage equipment (planting will be done with a double disc drill). Its fairly light (sandy loam) land so it drys decent so I should be able to get on it fairly early. Talking to a few older guys around here, they suggested to prep the seed bed, wait for weed growth then seed, wait till wheat comes up and rod weed like mad...?

Any help or advice is appreciated, thanks.
