West Texas | I don't think this is the same but my parents use to have a hog killed each fall/winter when I was little ( and unlike some claim I was little at one time).
The guy fixing it would dig a pit after killing and gutting it out. He would fill the pit with straw, put hog in it and cover pit after setting straw on fire. It would burn the hair off the hide and kind of smoke it. Gave some great tasting bacon and pork rinds. I don't remember the details as it was a long time ago and I can't find anyone that remembers or knows exactly how it was done.
