Beef stew recipes

1 pot or chuck roast 3-4#
2 cups tomato juice
6 cups water
1/2 teas chili powder
3 teas salt
1/2 teas black pepper
1 diced onion
2 bay leaves

Cut the roast into bite sized chunks, add to pot along with the rest of the above ingredients. Bring to a boil and simmer with lid on the pot for 2 hours or until beef is tender.

Add:

3 diced potatoes
1 cup diced carrots
1 cup diced/cut up celery
1 can corn
1 can cut green beans
1 can sweet peas
1 can baby lima beans
1 can petite diced tomatoes

Simmer until potatoes and carrots are tender. You will need to add more salt and pepper to taste. It's my mom's recipe, best I've ever had. Just made some yesterday.


Made this recipe yesterday but skipped the corn, sweet peas and Lima beans since my pot was full. Excellent!
