North west MN | Spring wheat is the best if good quality I thing the mills that make flour blend cheaper winter wheat with spring wheat.
I guess the problem is when wheat gets alot of rain at harvest it partially sprouts in the head and when they try to make a loaf of bread the loaf gets big holes in it. They test out wheat for that when we haul it in the test is called falling numbers | |
