As long as you have snow there's no reason to add mulch. Water and protection. It's not too late to water, supposed to be 40 here for a few days, if I had those and the ground isn't muddy when it melts, I'd water them again, like a full inch for 3' radius, lots of water.

If you have rabbits around, bait them with corn and trap or shoot them, deer too. No easy way to fence around that many. Could try repellants, empty but not cleaned mayo jar, kept closed at room temp for a couple weeks, then mixed into water and sprayed works, at least for a little while. The problem is those are the newest, tenderest, tastiest greens for miles around, at least make them taste like rotten egg and rancid soy oil if you can't fence them. Maybe rotten corn or soy would work if you have any of that around?
