After getting good and sick once I always use an oven to make sure it makes temp. Don't need a repeat of that performance ever again.
I prefer the texture from dehydrator more than oven so I'll run it in dehydrator several hours and then oven to finish it off. I'd like to get a smoker and try jerky off there.
