Keep spreading, but check the block temp a couple more times. Like mitchco said, the thermostat, or away from the exhaust is where to check. IF, and only if that is high, then you want to check the water coming back from the bottom of the radiator, like the water pump inlet. so you're reading painted metal both times.
160 is not hot, so the bottom temp is irrelevant, the thermostat is not fully open.
Engine temperature would you be concerned.
