Mid MO | Get the biggest skillet with a lid you have. Put the ham steaks in the middle, one on top of the other. Quarter potatoes and arrange them around the edge. Pour in water to make around 1.5 inch deep.. Boil until the potatoes are soft. You could brown the ham steaks if you wanted but it's not necessary.
You want to use just enough water to cook the potatoes but not dilute the ham juice. The tators will soak up the flavor of the ham. 20-30 min, easy peasy!

What you have, I would pan fry with salt, pepper, sage, thyme, and savory.
