If you make good chili a crock pot full of it with some crackers would go over pretty well. I sometimes will take some chicken breasts and boil them for 25 minutes and dice them up fairly small and take a 11x14 glass casserole pan and mix the diced chicken breasts with a package of stove top stuffing mix and put it all in the casserole and dump about 2 cans of chicken broth on top and some Lowerys season salt and put it in the oven covered with tinfoil for about 25 minutes on 350 degrees. Will cook out and aborb the chicken broth and it's excellent. I actually made some baked red skin potatos in the microwave to go with it and it was a cheap and easy fast meal. I do that every once in a while. Sloppy joes in the crock pot are also easy and good. Even a bunch of scrambled eggs, bacon, sliced fried potatos, toast etc are really good and about as economical of a meal you can put together.
