Do some pulled pork and baked beans. I've been the humble recipient of such meals over my life. A welcome change from casseroles is nice. Or a lasagna. Maybe make a couple and deliver them frozen. At one time I had more casseroles ready to eat than I could possibly consume. As a side note include the recipe. Then if she likes them, she can add them to her repertoire.
