Kolorado
Snowies is the closest, if you don't want to go to CO, and Chad covered that pretty good. Just pray you don't happen to be there when the wind is blowing.

Togwotee is another spot in WY. Or even further over to West Yellowstone.

The new back country tracks from CanAm are way better, and may not get cussed at like Chad mentions. But he is right, that most tracks aren't worth a darn, and the SXS guys tear the trails up with them. Plus no way they would even go in deep January snow.

Wife would probably love trail riding on a nice day, get her in the goods and stuck, and you'll both have a bad day. January isn't the best time for beginners, snow is new and doesn't have a base, can literally be chest deep. So January ok for trail riding, but be aware it can be lots of work to learn, if you want to go off trail and back country ride.

Know you said no Colorado, but in CO there's Grand Lake, Hahn's Peak and Camp Hale for rentals, and guides. And probably some places on the Grand Mesa.

I'm doing a trip with beginners in late March. Not as much power, but much easier for them to learn, and for me not to have to help them get unstuck.
