if you get them small and tender they broil well rubbed with a little olive oil and topped with a generous helping of parmesan cheese. thats the healthiest way.

My wife makes a casserole with them and a little diced onion and garlic stirred in w/ egg and baked. Sometimes she adds oysters and it is amazing. (There might be more details)

My New England mother's way is to chunk em up and cook em down until soft. Then add milk, butter, cheese, pepper. I like a little white onion diced fine and added as it cooks.

The key to summer squash is picking them small.

Your recipe looks delicious. We find many people dont know what to do w them. They are a regular on our table in the summer.
