This year, my yellow squash plants have been producing very well.  

 

After seeing MaineFarmer’s Zucchini Boats Post a couple of weeks ago, I was inspired to try something similar with my yellow squash.

 

I selected some yellow squash of an appropriate size and shape, washed, halved, and then deseeded them with a grapefruit spoon.

 

Next, I chopped brisket and mixed in a little barbecue sauce.

 

My garden has also produced some ugly tomatoes that I diced.

 

There was some Velveeta cheese in the fridge, so I cubed it.

 

Then, I mixed the brisket, tomatoes, and Velveeta before spooning the mixture into the squash.  I baked them uncovered in a 375F. oven for 30 minutes.

 

The boats were a nice change from the other squash recipes I have been making.
