Google suggests it can take as little as 25 psi to break a small bone, and that a general lobster can exert 100 psi, All I know is the bigger they are - the less I want them getting ahold of me.
You'll also notice they have a crusher claw and a pincher claw. One for crushing and killing prey, and the other for tearing it apart.
