I've done both ways. Because of the stress on the animal, and resulting meat quality, it's worth just a few dollars more total to butcher on farm rather than to haul the animal and have it wait overnight before killing. Probably worth $50-100/ beef to do either of those ways rather than hauling and killing the same day.
