Wisconsin | Compressed air stored in underground caverns, can be combined with natural gas for peaking power, the natural gas exhaust reheats the compressed air before the air turbine. Not sure if that's in use or theoretical.
Solar thermal plants that store heat in mass for steam generation after the sun goes down. Not really storing electricity, but delaying production.
Hydrogen production then fuel cell to produce electricity.
