Careful on buying some of the used commercial meat processing equipment as it may be 3 phase electric. Know of two guys this happened to.
Today all you need to do is find yourself a VFD (oversize by a factor of 1.75 - - - please) and make sure your 3 phase is for 230 V.
There are some minor things to watch for but its not a big issue anymore.
