Print off their Alfalfa Analysis http://alfalfa.org/pdf/AlfalfaAnalyst.pdf
and look at the different pest and figure the resistance you want for each of the pest that effect your area.
Put a number value to each level of resistance and look at a variety. Add the number score for the resistance and that is a good place to start your selection.
Over the years I have changed some of the criteria and expect to change criteria as the world changes. (Or at least my awareness of the world!)

TAMU has zero interest in alfalfa, though there is some regional interest. Central Texas is not one of those regions.

Fertility, I have found my dryland alfalfa does better (here) if the tissue analysis is above 2.50% K. (Sample from top 6" of standing crop)
or if the hay test results are better than 2.00% K.
