Texas/New Mexico Stateline | I would want the cutoffs close to the sink. I don't see any reason for copper myself. To make myself feel better, I would consider making some kind of support to keep the red and blue lines from flopping around. Maybe a board screwed to the legs of the sink, and securing them to that.
I use pipe dope on everything, even stuff I probably shouldn't. Helps prevent leaks, and helps make things easier to unscrew later. Sort of like anti-seize in the shop.
