I believe that most farm employees would be considered non-exempt, and therefore would be required to be paid hourly. A salaried employee basically has to be management level. They need to be in charge of at least 2 employees, have some actual say in what happens at the job, and can fire others. I don't think this is enforced heavily, but an employee could make the employer pay them back wages if they are paid salary and are a non-exempt employee in the eyes of the govt. Just something to consider when determining hourly vs salary.
