You will probably be fine adding on but like others say get rid of the existing additions if they will not fit in with your needs. as others have also said keep your floor elevations as spot on as possible. I prefer wood floor joists rather than slab on grade. you can tweak a wood floor level plus in my mind it provides a warmer floor than slab on grade even if it is on a crawl space. roof lines and sides are not as important to get lined up, in fact, sometimes it adds to the appearance of a home if the new roof is stepped below the existing roof and like wise for the sides. Hopefully you do not have to live in the home as you are doing the remodel. take your time and put a pencil to paper. get all the existing dimensions and elevations sketched out. then start playing around with what if's and like to's and see what you come up with. put some dollar value to it. worse thing is to start then run out of money.
