How sweet are you Laura. A very kind act for you to do for your neighbor. Having had a hip replaced and two knees, this will be a very big help to the person. Not knowing if this is a single person, but then you did say they, so I am assuming at least a couple. I pre-made and vacuumed sealed many, many meals so my husband would only have to get out what we were hungry for. A lasagna is great, or mix up some meatloaf and don't cook it, but it would be ready to pop in the oven with some baked potatoes. One thing I would suggest is whatever you end up making, it is helpful to have it in a disposable pan. That way if it isn't made right away, you aren't waiting for your pan to come back. Sometimes after surgery, a person isn't very hungry for awhile. A quart of homemade soup would be good too. Again, so sweet of you to do this for them.
