Your suggestions sound delicious and I'm sure they would be appreciated. One thing to consider is how much food might be received from others too in a short period of time, and could they possibly use it all or would they need help freezing some of it? Maybe lasagna one week and ham with corn casserole the next?

A friend of ours is really good with this stuff, and she's often fixed beef and homemade noodles and frozen them in serving size plastic bags. There are no containers for the recipients to have to worry about returning or think they needed to replace. The beef and noodles would be used as desired since they were frozen. But this presumes the recipients will have space in their freezer and someone who can operate a microwave to heat up the items for a meal as needed.

You sound like a good neighbor, and I'm sure your neighbors think so too and will appreciate whatever you decide to take.
