They use a forward contract or board to lock in prices....
As a fellow cowboy it would be the same as let's say the pig virus that killed so many hogs a couple of years ago as a good time to lock in feeder calves. I know it isn't ethical to capitalize on others misfortune, but I don't really believe the pit traders have our best intentions at heart.
