NE SD | Agree on the cut card. But there may be a few things that they will do that aren't on the list as well. For example, the guy here does not have brisket, brats or skirt on it, but he'll cut those if you want.
Just out of curiosity, what are you guys paying? I just talked to the guy here and he charges 2.10/pound carcass weight then .50 for processing. Lately they've been coming in at 220-230 pounds. No special charges for different cuts of steak, just flat rate 2.10 across the board. The way he does it, I write a check for 2.10 with the name of the farmer/rancher/whatever he wants to be called on it, and the .50 goes to the butcher. At least I know exactly who gets what.
Maybe it's the same everywhere, I only deal with the local guy so my knowledge is limited on that. | |
