They will ask if you want 1 or 2# packages of hamburger. We always get meat wrapped in good plastic, then freezer paper, helps with longevity in freezer. We save the brisket. Some people like to get the liver and heart, tongue. My brother gets the head for the tender head meat (delicacy). Tail bone for soup. Some like minute steaks, others grind it into hamburger.

Locker may have cutting card on Internet, or you can stop and get a card from them, and then decide what you want done. They will be glad to answer any questions.

We picked up a quarter of beef the other day, we got 3 trays of packaged beef. Carcass was 920#, so a quarter weighed 230# before cutting.
