As high crop said. Cut sheet to fill out. How many people are you feeding? 1# hamburger or 2# . What % do you want 85% or 90 % hamburger . How many steaks per. Package. How thick. Roast # .
I had a lot of burgers made in to patties . Cost more but sure is nice to grill them.
Steaks trimmed or fat left on?

Get the cut sheet and go over it with the boss. :) .
