I'd have most of the roasts ground into hamburger, if you don't you'll have a pile of roasts and there are only so many ways to cook them.

Then you'll have about 15# of roasts left an nothing else. You might want the round to go in the grinder too.

Last steer we did, we kept the rump roasts and the rest of the roast cuts went in the grinder.
