You mention that Holsteins bred to a black bull "fit right in" to a black beef contract.

That is the case and a bit curious that a half dairy calf can be sold at a premium because its black while full beef Herefords are discounted.

I recently saw a Holstein steer carcass hanging in an aging cooler next to one of my Hereford steer carcasses and there was no comparison whatsoever. The two were very different.
