We don't eat a lot of potatoes, but we do grow our own. We usually just put them in the drawers in the fridge, and they keep all year. Then by the time spring rolls around, they start to sprout, and we plant what is left and start all over again. We usually end up growing more than we can use. The extras go to the neighbors.
