The other thing I was thinking about with the potatoes is cubing or slicing them, blanching them and vacuum sealing them in the freezer too. Just to help process them. Last year we laid them out on the basement floor to cure for a couple weeks, then wrapped them in burlap in storage crates with decent airflow. They lasted until May/June before the ones we didnt eat needed to be thrown out. Man we can eat taters, but last year we had a rediculous amount of them. The onions I will slice/dice, vac seal and freeze. Drying some on the back porch too right now.
