Coals? The lid in some Dutch ovens is for adding water on top, to help increase the condensation while cooking on a modern top range, I doubt the OP has a place for coal fires in their kitchen. Restaurant and collectivity kitchens frequently make use of aluminum, but I strongly recommend against it, especially for slow food cooking such as in Dutch oven. It only takes washing an aluminum pan once to understand how much they leach aluminum in our food, especially when cooking some acid ingredients such as tomato. Aluminum or cast aluminum should be prohibited from the kitchen unless it is in the core of the pan and not exposed to food directly. Enameled cast iron doesn't require specific care, although they can't do all that plain cast iron can do, like high temperature oven or top range, or deep frying, but that's the whole point of these slow cookers.
