I'd plant something that needs nitrogen. Kinda depends if you want to take same field back to alfalfa next fall or if it will fall into a normal crop rotation. I kill alfalfa in August after 3rd cut, work it, and drill wheat in September, harvest wheat in July and drill back to alfalfa in August.
