We just put two TV's up front and 1 in the back of the sanctuary for the singers and pastor. We went away from the projector

We did not run the signal from the sound booth (EZWorship) through our router over ethernet and to the TV's We ran cat 6 to each TV from the sound booth and used this splitter

The splitter sends the HDMI over cat 6 cable and then converts back to HDMI at the front of the church. It works fine over about 100 ft of cable. We transmit 1080P. We ran a second line for ethernet if we ever need it in the future.

Our concern running video over ethernet was video lag while viewing in the sanctuary. When we set up our fellowship hall our plan is to run a video server on the OBS software that does our streaming to facebook and youtube and also stream locally to wherever we have ethernet. The issue with the ethernet stream was when we first started streaming over the internet we were seeing about .9 seconds lag at the very minimum when sending video over our network.

The hardest part of the job was running electrical and low voltage. There are people out there that will set these up, but they charge a lot of money for it.
