We spell it jitrnice (head sausage) Its a sausage made form the hogs head, tongue, liver , heart and kidneys.
Its cooked and then ground. Seasoned to taste and mixed with barley and then stuffed in casings.
I make some every year. Some of the local markets make it also for sale.
