Hit em with cold running water immediately after cooking. Rapid temp change from boiling to cold loosens the shells. Works perfect for store bought eggs. If you grow your own might have to let em age a couple of weeks in the fridge before boiling. Oh, and don't forget to roll them rather than tapping to crack the shells.
