HP doesn't use proprietary hard drives. They are standard disks. Now that you mentioned they are SATA disks, there won't be any jumpers. SATA technology is new enough that the BIOS should recognize a 320GB disk, but maybe updating the BIOS would help you out. Of course if you can see the hard drives in the BIOS, then you're probably fine.

The Windows setup CD comes with storage controller drivers for a lot of controllers, but not all of them. If setup isn't seeing any disks, then most likely it just doesn't have the driver for the controller. You will need to get the driver for that on a floppy disk, and then at the very beginning of windows setup, it will give you the option to press F6 to load a third party storage driver. It won't acknowledge that presse F6 until a few minutes later when it asks for a floppy disk with drivers. At that point, put the floppy in and let it scan the disk for drivers. Load whatever it finds and continue on with setup. If you got the right driver, you will then have access to the hard drives.
