E.Central MN | A local(Minnesota) food give away program had several items from a local processor that made products for the food service industry. They had 2-3# bags of fresh mashed potatoes and a couple kinds of egg products including hard boiled eggs and liquid eggs. I think the processor had their products labeled for the food service industry, but not for the retail level plus probably didn't have the supply line connections set up to divert production to that market very easily. The food service industry was stuck with a substantial amount of inventory because the schools and restaurants were shut down. So they donated a lot to the food donation programs at several towns in the region. Kudos to that processor, but I'm sure they took a financial hit due to Covid, too. Lots of moving parts in the food chain from farm to table.
