Wisconsin | A good quality pump won't mind being deadheaded at all. on the other hand, you're obviously pumping the most water at least cost at a high flow, so you don't want to run one restrictive sprinkler, but you don't need to run it with NO pressure. Sounds like a shallow well, so the pump will run happier with a little backpressure, less load like was stated.
Yes, you need a control box, or a capacitor and a switch to manually start the pump, or a "hard start kit" out of a refrigeration unit/AC.
