We leave the calf on all our Jerseys and then after the first two weeks we just milk when we need milk.   Wait a couple days and skim the cream off the top of the jar.   It usually takes two weeks to get the udders settled down so they only produce what the calf will drink and then we can steal a couple gallons as needed.   Ice cream made from all cream the best you can get.   So smooth.

I'm not sure if my wife puts raw eggs in this recipe or not.   We have our own hens so I'm not afraid of raw egg.   We drink the milk raw too.
