In TX you probably would be fine with Sorghum Sudan as it would probably keep well in your environment. We tried it once between alfalfa seedings here in Iowa and while you get a really good yield on the 1st cutting the bales don't keep well and the 2nd growth wasn't wort it to cut so we just grazed it then plowed it up.

We probably need to plow up our main alfalfa field after this year and not sure what to do with it between seedings since we don't have another field we can make up the lost acres for hay while we take out the toxins in a transition year. Last time we killed off the field with RoundUp after the first cutting then no tilled soybeans in late June which we caught bad luck as we had a drought that year and the beans were crap so we just fall grazed the field instead of combining. Seeded in some grass mix for the next year then plowed it up again. May try to work out a deal with the neighbor that we maybe make an acre swap contract to seed out some of his acres for some hay next year and let him do corn on this field if we don't come up with a better plan on how to get the baleage we need to make it through a winter.
