I was a bread addict and that was the toughest. Didn’t like most of the keto bread substitutes.

Took to this bread. It uses gluten, not flour so no Starch. The generous amount of flax is to get the fat up.

Made about ten buns per batch.

One bun and you will be stuffed.

Bread craving gone now, haven’t made a batch in awhile.

Ingredients are a bit different.

1 cup Warm water
1 tablespoon instant yeast
1 teaspoon honey.

Mix those
I let sit a bit then stir in

2 lightly beaten eggs,
2 Tablespoons melted butter

Dry ingredients many mix them in separate bowl, I don’t bother, just put them in blender bowls with liquids and turn it on.

2/3 cups ground flax
1 1/4 cup wheat gluten
1/2 cup oat fiber
1/2 teaspoon xanthan gum
1 teaspoon salt

Let mixer mix ingredients with dough hook for 7 to 8 minutes. You want a dough ball.

It is fairly sticky, wet hands when handling, cut off pieces and make a ball, put them on a sheet, greased or parchment.

Let rise, don’t worry about overraising, the yeast runs out of honey. I brush them with butter so they don’t dry, but not big deal.

Loaf is 375 oven for 25 minutes, I do buns shorter time, my oven 18 turns out really well.

They don’t seem to go stale or anything but around a week, they will mold.

My wife and I agreed these were the best keto bread.
