I would not try and freeze lettuce. The water content is too high and it will be mostly a soggy mess when you take it out again. If your idea of salad is lettuce salad, then I agree with the other poster in that buying the actual head of lettuce or romaine will last longer than buying a bag of pre-cut lettuce or greens. Once those bagged products are open and exposed to the air, they start to spoil pretty quickly. If you keep a head of lettuce in a crisper (airtight container with a gadget on the bottom to keep it out of the moisture) it will keep quite a long time. Iceberg lettuce itself doesn't have much in the way of fiber- you can use other vegetables for fiber and "digestive reasons". Things like cabbage, purple cabbage, fresh carrots, celery, radishes, etc can be shredded or diced and contain fiber and likely will keep longer if stored appropriately.
